Crispy Szechuan Chicken
Ingredients for 6 people :
- 1 chicken poultry
- 2 liters of chicken soup
- 1 inch . ginger root
- 4 tbs rice wine or dry sherry
- 1 tbs of Szechuan peppercorns
- Salt
- 8 tbs soy sauce
- 4 tbs brown sugar
- 4 pcs star anise
- Sunflower or peanut oil .
Preparation

Ok I know this is not a Chinese recipe... But it's sooo good that I have to share it here, I'm sure you will like it.

Stuffed Wonton
Ingredients
For the dough:
- 1 egg, lightly beaten
- 1,5 cup flour
- 2 tablespoons water
- salt
For the filling:
- 1 chicken breast
- 1/2 tsp. oyster sauce
- 4 Chinese onions
- 1 egg
- oil
- Chinese cinnamon
- salt
- pepper
Preparation
To prepare the dough , mixing the egg, flour, water and salt. Work the dough until tender find it. Let stand 10 minutes and stretched until it is as thin as possible . Finally , cut into squares of 5 cm .To make the filling , fry the chicken and seasoned with pepper, salt and Chinese cinnamon. Add the onions and oyster sauce . Satay Chicken (With Coconut)
Ingredients for 6 servings :
- 500 g of chicken breast
For the Marinade :
- 200 ml coconut milk
- 2 limes
- 1 red chile
- 1 clove of garlic
- 1 tablespoon ground cumin
- 2 tablespoons soy sauce
- 1 tablespoon curry
For Satay Sauce :
- 125 g of peanut butter
- 1 spring onion
- 1 lemon
- 200 ml coconut milk
- salt
For the salad sprouts :
- 2 red onions
- 250 g of bean sprouts
- 2 tablespoons julienned basil
- 2 tablespoons julienned mint
- sesame oil
- salt
Cut the chicken into thick strips . Mix the coconut milk, the lime juice , red chili pepper , garlic clove , cumin, soy sauce and curry and chicken reserve in the refrigerator for about 4 hours.
We dip the wooden skewers in water for 20 minutes, then drain them .
We took the chicken, drain and reserve the marinade. Heat the oil in a skillet. Prick the chicken on skewers and brown them on both sides.
For Satay Sauce : fry the finely chopped onion in a little oil , add the marinade. We cooked , add the coconut milk, peanut butter and lemon juice . Season with salt and , if necessary , lighten with a little water .
For the salad sprouts : cut the onion into thin strips . In a wok with a little sesame oil and a pinch of salt , saute onion and sprouts for 1 minute over high heat . Mix with basil and mint.
Serve the skewers with a little sauce on top and with salad sprouts.
Oriental Shrimp
Ingredients:
- 1 pound shrimp (21-25) clean without the tail
- 2 tablespoons minced fresh ginger
- 2 tablespoons minced garlic
- 1 medium onion cut the Julian style
- 1 green pepper cut the Julian style (bell pepper)
- 1 carrot cut the Julian style
- 1/2 cup water chestnut
- 15 snow peas
- 1 ounce Teriyaki sauce
- 1 ounce salsa Schezuan
- Hoisin sauce 1 ounce
- 1 ounce of water
- 2-tbsp sesame oil
Procedure:
In a wok put 1 tablespoon oil, 1 garlic and ginger 1. Saute the shrimp for two minutes and remove from wok.Then place in the wok 1 tablespoon oil, 1 garlic and ginger and saute 1 all vegetables for 1 minute. Add the meat and saute for 1 minute.
Add water and saute for 1 minute more. Bon appetit!

Chinese Curry Noodles
Ingredients
- 150 gr. Chinese rice noodles
- 1 chicken breast
- 650 ml. chicken broth
- Olive oil
- 1 level tablespoon curry
- 10 sheets of spinach
- 1/2 beet
- 1/2 onion
- salt
Instructions
Initially cook the chicken pieces in a large pan with olive oil. When the chicken is browned, let's add the chicken broth and let's raise the heat to create a "chup chup" constant but quiet for cooking Chinese noodles.
When the broth starts to boil, add Chinese rice noodles with curry, stir well, and let everything cook until pasta is done. While we're chopping the onion and finely grating the arugula, which we will take to the pan along with the spinach just a couple of minutes before removing from the heat.
Serve accompanied Chinese noodles curry chicken and chopped vegetables with broth, like soup.
Lemon Chicken with Noodles
Ingredients
For the marinade:- 400 gr. of chicken breast fillets
- Salt
- 1 egg white
- 2 teaspoons cornstarch
- Oil
For the sauce:
- 2 teaspoons cornstarch
- 2 tablespoons water
- 6 teaspoons of sugar
- 2 tablespoons lemon juice
- ¼ cup (about 65 gr.) Chicken broth
- 2 teaspoons soy sauce
- 1 teaspoon white wine
Preparation
The first thing we will do is marinating the meat, which is actually going to be like a different kind of tempura; in a large bowl put the egg ( I use pasteurized and so I have a bud to spare hanging around in the fridge until ready to throw ) and two teaspoons of cornstarch and stir well .
We season the chicken fillets and cut into chunks or strips , not too big. Incorporate them into the mixture of egg white and cornstarch and stir so that all the pieces are well pringuen . Booked in the fridge for at least half an hour .
Once this time has passed , we have to fry the marinated chicken pieces . If you do not scare the calories , you can fry them in hot oil . If you fancy catching a little, you can brown them in a nonstick pan with a teaspoon of oil only. I opted for the latter option ( although I have to say it was making a sacrifice , because good is the other : P). When we have all the facts , we booked .
Then in a pot we will prepare the sauce desliando two teaspoons of cornstarch in two tablespoons of water ( kitchen, desliar means " dissolve ." Can you do it directly in the pot or if you want to make it easier , check before water in a glass, then check cornstarch and dale turns with a spoon like a chocolate milk, when well dissolved , pour the contents of the cup to the pot ) . Then pour the remaining ingredients (sugar , lemon , wine, broth and soy) and bring to a boil.
With sauce and tied , add the chicken pieces we had reserved and stir well so that pringuen sauce everywhere.
Serve hot accompanied by a fried rice or noodles.
